Latest Happenings
Hope everyone had a wonderful Easter and Passover! It was a long week in our house with the kids off from school and eight days of matzo, but we made it through. To celebrate, Saturday night my hubby and I went out for a big Italian dinner with friends – we were all so happy to have bread and pasta again!
Although my girls are happy to keep eating matzo (they even took matzo sandwiches to school for lunch today!), they are of course excited for some pasta, so no surprise that’s first up on the menu this week. Find out what else we’re enjoying on our table in the menu plan below!
Menu Plan Monday: Week of April 9, 2018
Monday:
Snack: Apple slices and Bohana Popped Water Lily Seeds (a new nut-free snack sample I recently received)
Lunch: Matzo with cream cheese and lox/side of tuna salad, veggies, and grapes (yes, Passover is over, but my girls are still loving the matzo!)
Dinner: Vegetable Pad Thai with Crispy Baked Tofu (recipe found here and here)
Tuesday:
Snack: Pumpkin chocolate chip mini muffins and grapes
Lunch: Beet and Goat Cheese Quinoa Salad, olives, side of veggies, and orange smiles
Dinner: Mediterranean Sheet Pan Salmon (making with corn, tomatoes, and asparagus) and rice
Wednesday:
Snack: Yogurt pouch
Lunch: School lunch
Dinner: Thai Peanut Chicken Satay with Roasted Garlicky Green Beans and roasted butternut squash zig zags
Thursday:
Snack: Popcorn trail mix
Lunch: Leftover salmon from Tuesday or veggie burger, side of veggies, and apple slices
Dinner: Leftover chicken or eggs
Friday:
Snack: Veggies and hummus
Lunch: School lunch
Dinner: Coconut Lime Chicken, Crispy Baked Sweet Potato Fries, and Roasted Asparagus
