Farm to Table Dining in Newport

A couple of weekends ago my husband and I went on a little pre-baby (or shall I say babies!) trip to Newport, Rhode Island. We were excited for a weekend of relaxation and seeing the beautiful mansions that we had always heard so much about. While we always seek out the best dining options wherever we travel, and we had…

Eat Better, Eat Together

I wrote this post as a participant in the Eat Better, Eat Together Balancing Act blog carnival hosted by the Dairy Council of California to share ways families everywhere can make time for family meals that include foods from all the food groups. A list of other registered dietitians and moms who are participating in the Balancing Act blog carnival will…

Tomatoes and Basil

As you may know from summer’s past, I love farm-fresh tomatoes. What I love even more is the simple yet nutritious and delicious combination of tomatoes and basil. Lucky for me I have both from my CSA this week, which makes me so happy! This afternoon as I was looking in my fridge and pantry for an afternoon snack, I…

Recipe Redux: Blueberry Basil Cooler

It’s that time again: the monthly Recipe Redux blog challenge! Last month’s theme was grilling (if you missed my Grilled Salmon Burgers with Cherry Chutney check it out), and in keeping with the spirit of summer, the Recipe Redux founders made this month’s theme Summer Beverages. Back in April, Nutritioulicious intern Megan posted a refreshing recipe for Strawberry, Lemon, and…

Roasted Beets and Spring Onions

The other day I wrote about roasting fennel and mentioned that it made for a great side dish with roasted beets and onions. The truth is, I have yet to find a vegetable that doesn’t taste good roasted! Since beets and spring onions are in season, that’s what I had on hand and they were so easy to cook up….

Roasted Fennel, Garlic Scape, and Sweet Onion Dip

What do you do when you have a handful of uneaten CSA vegetables and another delivery coming the next day? Roast them up and make them into a dip! At least that’s what I did the other night. I had one fennel bulb, a handful of garlic scapes, and three small sweet red onions. I also had half a dozen…

Quinoa-Stuffed Cornish Hens

Most Friday nights my husband and I stay in for dinner and I cook something that takes a little more time to prep than during the week. I try to keep it interesting and vary the main dish, so some weeks I make traditional roast chicken and other times I make more unique recipes like beef stew and miso-ginger chicken and cabbage.  A…

Tzatziki Sauce

In celebration of National Mediterranean Diet Month, here is the second of two Mediterranean-inspired recipes from Nutritioulicious intern Jo Bartell.
Since I shared a nutritioulicous baked falafel recipe yesterday, I thought it would be fitting to share my easy recipe for tzatziki sauce today. Tzatziki is a Greek dipping sauce that tastes great on its own or with falafel, sliced veggies, or whole-wheat pita. Tzatziki demonstrates yet another use for nutritious, delicious, and protein-packed Greek yogurt. I used 2% plain Greek yogurt for this recipe, but it also tastes great with 0% if you want to cut out even more of the fat. … read more »

Baked Falafel

In celebration of National Mediterranean Diet Month, here is the first of two Mediterranean-inspired recipes from Nutritioulicious intern Jo Bartell. I have always loved falafel. Lucky for me there is no shortage of delicious, crispy falafel at the various Middle Eastern restaurants and falafel stands scattered throughout New York City. For those of you who are not familiar with this…

Strawberry, Lemon, and Basil Soda

By Megan Kian With the warmer weather approaching I thought I would share a recipe for do-it-yourself homemade soda that I discovered in the most recent issue of Bon Appetit magazine. It can be hard to find a refreshing, yet low calorie drink other than water or diet soda. Next time you’re outside enjoying the warm weather, reach for this…
