Did you know May is National Salad Month? If not, then now you do! And now you can go ahead and spend the rest of the month making and enjoying nutritious and delicious salads like this Strawberry Arugula Salad I threw together as a side dish for dinner one night last week!

Throughout the winter, my go-to side salad for weeknight dinners is this Citrus Fennel Salad, which has arugula topped with thinly sliced fennel, Cara Cara oranges, and a light citrus vinaigrette. Sometimes I add toasted almonds, sometimes thinly sliced beets. On occasion I’ll even throw some crumbled goat cheese on there.

Now that spring is here, those Cara Cara oranges I adore so much are no longer available at Trader Joe’s (where I get all the ingredients for that winter salad). Whomp whomp {insert sad face}. On the bright side, strawberries are in season! So what better way to change up my go-to weeknight salad than to add strawberries and a strawberry-based dressing?! Genius, I know!

Ingredients & Preparation

This Strawberry Arugula Salad is super quick and easy to whip up. It does require a few kitchen tools, but hopefully you have them on hand – they are some of my staples. You’ll need a microplane zester, a food processor or blender (I use my Cuisinart mini-prep food processor), and a mandoline. Despite all these tools, the recipe is easy peasy – I promise!

And it sounds fancy with the strawberry champagne vinaigrette. Champagne vinegar is so delicious and not super expensive, so I do recommend buying a bottle even if you have a bunch of other vinegars on hand. While the salad dressing calls for honey, if you are vegan or making this for vegans, you can substitute maple syrup for the honey. You can also make the salad even fancier and serve it for company by adding some crumbled goat cheese or make it an entree salad by adding some grilled chicken.

However you decide to serve it – simple or more involved – just head to the kitchen and make this Strawberry Arugula Salad! And make sure to check out some of my other salads to celebrate National Salad Month!

Ingredients

For the Dressing:

  • 1/2 cup chopped strawberries
  • 1/2 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon Champagne vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon Kosher salt
  • Freshly ground pepper, to taste

For the Salad:

  • 4 ounces arugula
  • 1 cup sliced strawberries
  • 1 cup thinly sliced fennel (use a mandoline if you have it)
  • 2 tablespoons slivered almonds, toasted

Instructions

  1. In a food processor, puree dressing ingredients from strawberries through honey. Season with salt and pepper, to taste.
  2. In a large bowl, toss arugula, sliced strawberries, sliced fennel, and dressing. Sprinkle with toasted almonds and serve.

Recipe Notes

  • To toast almonds, heat in a dry skillet over medium heat, stirring occasionally, until lightly browned and fragrant. You can also toast in a toaster oven, just keep an eye on them to make sure they don't burn.
  • Substitute maple syrup for honey if vegan.

  1. Such a pretty salad, and I love the addition of fennel! When we lived in Falls Church, VA, there was this great “old school Italian” neighborhood restaurant where they served fennel w/ the house salad. I miss that place 🙁 And, I miss cara cara oranges too!!!

    1. Thanks so much EA! It took me a while to get into fennel, but now I love it. Hope you get your hands on some Cara Cara oranges next winter!

  2. I love the salad month love! I’ve never tried Cara Cara oranges, now you have me wanting to be on the lookout for these next season. Strawberries however, always a great option!

  3. I had no idea that May was national salad month, and I also have never tried champagne vinegar (although I love champagne!!). Pinned this for later 🙂

  4. And this is why I get excited about strawberry season! What a gorgeous salad! Perfect way to enjoy strawberries throughout spring and summer!

  6. Fresh and flavorful I love the combination of strawberries and fennel you have going on. This salad screams summer.

  7. What a beautiful salad. In the summertime, strawberries and arugula are made for each other along with goat cheese!! And I also love the sounds of this dressing – I can’t wait to make it.

    1. Thanks Rebecca! Goat cheese is a great addition to this salad – I add it often. Can’t wait for you to try it all!

  12. What a lovely salad! I usually make strawberry salad with spinach, but arugula must add such a nice contrasting flavor. And fennel? Yum! It’s been ages since I’ve bought that – will have to see if Trader Joe’s has it in yet.

    1. Thanks Alisa. Strawberries and spinach are a pretty popular pairing (it’s that vitamin c-iron connection!), but the arugula is a really nice peppery flavor contrasted with the sweet strawberries. Hope you give it a try soon. And yes, hopefully your TJ’s has fennel – mine has had it lately!

  13. Hello. My name is Carla. And it took me until 48 to learn how much I loved strawberries in salad. I swear even as recently as last year I would have picked them out and eating them separately. No more. This looks perfect 🙂

    1. Thanks Mikki. You can easily sub your favorite green for the arugula, I just personally love the peppery contrast of arugula with the sweet strawberries!

    1. They sure do! And I am totally with you Emily! Every morning that the sun is shining I think “oh it looks like a lovely spring day,” but the temps are still so cold!

  14. This looks so delicious and refreshing!! I’ve always been a sucker for a good greek salad or caprese salad!

  15. This look amazing! I love the combo of fruit with salads. I had to google Arugula (we call it Rocket here in the UK)!

    1. Thanks Lucy and I agree – sweet savory combos are my fave. Ha, that’s right, I forget there are different names for certain veggies in the UK!! Hope you try this Strawberry ROCKET salad soon 😉

  16. I bet the combo of sweet strawberries with peppery arugula is so yummy! Plus I love nuts in salads so the almonds in here are great.

  17. What a gorgeous, delicious salad! I love strawberry and arugula together. That dressing looks perfect.

  18. Salad looks so delicious and perfect for spring. I love the sound of that Champagne vinegar. This must uplifted the whole salad to new flavor level.
