Strawberry Arugula Salad with Fennel, Toasted Almonds, and Strawberry Champagne Vinaigrette

Sweet, juicy strawberries, crisp fennel, peppery arugula, and crunchy toasted almonds are tossed together in a sweet and elegant strawberry Champagne vinaigrette dressing for an easy weeknight side dish or festive appetizer for company.

Did you know May is National Salad Month? If not, then now you do! And now you can go ahead and spend the rest of the month making and enjoying nutritious and delicious salads like this Strawberry Arugula Salad I threw together as a side dish for dinner one night last week!

Throughout the winter, my go-to side salad for weeknight dinners is this Citrus Fennel Salad, which has arugula topped with thinly sliced fennel, Cara Cara oranges, and a light citrus vinaigrette. Sometimes I add toasted almonds, sometimes thinly sliced beets. On occasion I’ll even throw some crumbled goat cheese on there.

Now that spring is here, those Cara Cara oranges I adore so much are no longer available at Trader Joe’s (where I get all the ingredients for that winter salad). Whomp whomp {insert sad face}. On the bright side, strawberries are in season! So what better way to change up my go-to weeknight salad than to add strawberries and a strawberry-based dressing?! Genius, I know!

Ingredients & Preparation

This Strawberry Arugula Salad is super quick and easy to whip up. It does require a few kitchen tools, but hopefully you have them on hand – they are some of my staples. You’ll need a microplane zester, a food processor or blender (I use my Cuisinart mini-prep food processor), and a mandoline. Despite all these tools, the recipe is easy peasy – I promise!

And it sounds fancy with the strawberry champagne vinaigrette. Champagne vinegar is so delicious and not super expensive, so I do recommend buying a bottle even if you have a bunch of other vinegars on hand. While the salad dressing calls for honey, if you are vegan or making this for vegans, you can substitute maple syrup for the honey. You can also make the salad even fancier and serve it for company by adding some crumbled goat cheese or make it an entree salad by adding some grilled chicken.

Strawberry Arugula Salad with Fennel, Toasted Almonds, and Strawberry Champagne Vinaigrette

Ingredients

For the Dressing:

  • 1/2 cup chopped strawberries
  • 1/2 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon Champagne vinegar
  • 2 tablespoons olive oil
  • 1 teaspoon honey
  • 1/4 teaspoon Kosher salt
  • Freshly ground pepper, to taste

For the Salad:

  • 4 ounces arugula
  • 1 cup sliced strawberries
  • 1 cup thinly sliced fennel (use a mandoline if you have it)
  • 2 tablespoons slivered almonds, toasted

Instructions

  1. In a food processor, puree dressing ingredients from strawberries through honey. Season with salt and pepper, to taste.
  2. In a large bowl, toss arugula, sliced strawberries, sliced fennel, and dressing. Sprinkle with toasted almonds and serve.

Notes

  • To toast almonds, heat in a dry skillet over medium heat, stirring occasionally, until lightly browned and fragrant. You can also toast in a toaster oven, just keep an eye on them to make sure they don't burn.
  • Substitute maple syrup for honey if vegan.

  1. Such a pretty salad, and I love the addition of fennel! When we lived in Falls Church, VA, there was this great “old school Italian” neighborhood restaurant where they served fennel w/ the house salad. I miss that place 🙁 And, I miss cara cara oranges too!!!

  12. What a lovely salad! I usually make strawberry salad with spinach, but arugula must add such a nice contrasting flavor. And fennel? Yum! It’s been ages since I’ve bought that – will have to see if Trader Joe’s has it in yet.

    1. Thanks Alisa. Strawberries and spinach are a pretty popular pairing (it’s that vitamin c-iron connection!), but the arugula is a really nice peppery flavor contrasted with the sweet strawberries. Hope you give it a try soon. And yes, hopefully your TJ’s has fennel – mine has had it lately!
