Hope everyone had a great weekend! Did you do anything fun? The weather was beautiful around here – we enjoyed some walks, time on the swings, and a couple of birthday parties. Plus, I helped out at the Lower Westchester Mother of Multiples‘ Tag Sale, which overall was a great success (although I had things that didn’t sell, including our double Snap n’ Go stroller – anyone interested?!).
It’s going to be a pretty light week for me in terms of cooking. I had so much leftover from Friday’s dinner that I realized there was no sense in making something new tonight, so that saves me one day of cooking – I love when that happens! Here’s what’s going on in the Nutritioulicious kitchen this week.
Monday: Leftover Miso-Ginger Chicken and Cabbage and Noodle Kugel
Tuesday: Moroccan (turkey) Meatball Soup with Sweet Potato and Roasted Broccoli
Wednesday: Dinner out before seeing an off-Broadway show
Thursday: Dinner with Girlfriends
Friday: Lamb-and-Apricot Stew over Quinoa with Roasted Asparagus
Saturday: Dinner out with friends
