Menu Plan Monday: Week of April 22, 2013
Happy Earth Day!
This past weekend I celebrated at the Serenbe Community in Chattahoochee Hills, Georgia. What an amazing place that focuses on land preservation, agriculture, energy efficiency, green building, walkability, high density building, arts and culture, and community living for multiple generations. I’ll tell you more about it another time, but boy was it great to be outside enjoying the sights and smells of nature!

Now to this week’s menu. We’re still not seeing an abundance of spring produce here, but this is what we have on tap for the week.
Monday: Soyboy Ravioli Rosa with homemade tomato sauce and vegetables
Tuesday: Curried Salmon with Tomatoes and Dried Plums
Wednesday: Tortilla Soup with Black Beans (and a few modifications!)
Thursday: Dinner with Girlfriends
Friday: Coconut-Lime Chicken and Thai Vermicelli Salad
Saturday: Dinner out with friends
Sunday: Leftovers?
