Last week I didn’t get a chance to share my Menu Plan Monday, but we enjoyed some delicious meals including a trendy take on baked ziti and fish tacos – a family favorite. This week is going to be filled with various cuisines. One night we’ll be going Greek, another night our fabulous nanny is making Dominican food, Indian take out is on tap later in the week, and Friday has some Asian-inspired elements to the meal.
What’s your favorite cuisine?
Monday: Caramelized Onion, Mushroom, and Parmesan Frittata, Creamy Baked Acorn Squash, and Mixed Green Salad
Tuesday: Deconstructed Spanakopita with Greek Salad
Wednesday: Dominican night – Moro de Guandules, Pollo Guisado y Maduros (Rice with pigeon peas, stew chicken, and a side of sweet plaintains)
Thursday: Indian take out Stomach bug strikes
Saturday: Kid’s Birthday Party – that means pizza and cake (again!)
Sunday: Super Bowl! Vegetarian chili perhaps?
