All About Sugar Snap Peas

I love eating sugar snap peas in the summer. A few weeks ago, the Union Square Greenmarket was full of them, so I decided to pick some up from Keith’s Farm, which I can always count on for everything colorful, fresh, and organic.

Sugar Snap Peas

Sugar snap peas are a crisp vegetable with an edible pod that serve as a great sweet and crunchy snack. Although green peas are a starchy vegetable, sugar snap peas are nonstarchy and have a high water and fiber content (2 grams per cup), which makes them a great way to keep yourself satisfied and to maintain your digestive health. In fact, with less than 30 calories per cup (1 cup = ~20 pods) I can munch on as many peas as my heart desires without feeling like I’ve overdone it.

These nutritious and delicious peas are a very good source of vitamin C (1 cup provides more than 50% of your daily needs), an important antioxidant that helps protect your body against disease and will keep your skin beautiful too!

  1. My boys discovered snap peas at a farmers’ market earlier this summer and they were an instant hit. I serve them as a snack or even as a quick veggie at night when I don’t have time to cook something more elaborate. They love them raw and have fun dipping them in dressing too!
