Menu Plan Monday: Week of May 18, 2015
This week’s Menu Plan Monday plus eating right for your sight, words not to use when talking about food, french toast cups, and recipes with strawberries!
Happy Monday everyone! It’s chilly and rainy here today, but yesterday felt like SUMMER! It was hot, hot, hot, so we broke out the sprinkler and the girls had a blast running through the cold water. Plus we unexpectedly had the first barbecue of the season at a friend’s house last night!
This week I’m taking it pretty easy in the kitchen starting on Wednesday because I’ll be prepping for our big Memorial Day Weekend BBQ, which will include lots of goodies like Soy Marinated Flank Steak, Coconut-Lime Chicken, Sweet Potato Salad, some cocktails, and homemade ice cream sandwiches. I haven’t finalized the menu yet, but there’s a sneak peek! Check back over the next few days as we’ll be sharing a few posts highlighting how to keep the holiday weekend nutritious and delicious!
As usual, below you’ll find some of my favorite links from last week + this week’s Menu Plan Monday. And in the spirit of Memorial Day, tell me:

What will you be eating at your Memorial Day BBQ this year?

This is so great! I love your healthy meal plan! 🙂 …also, I can’t believe it’s almost Memorial Day weekend! Crazy!
Thanks so much Cailee, and thanks for stopping by my blog!
Thank you for including my article; means a lot!
You’re most welcome Jessa!
Your Memorial Day menu sounds wonderful! Hope you’ll post some photos and recipes. I’ve been wanting to try homemade ice cream sandwiches–would love to see what kind you make! Have a great holiday.
Thanks Sally! I will try to get some pics before company arrives – once they do I never remember!
Sprinklers! Wow, does that bring back happy childhood memories… plus a reminder that summer is certainly near! Your bolognese with polenta cakes is a fun twist, and I love fava beans. They’re one of the forgotten beans, I find; so underappreciated for how delicious they are. Excited to try your recipe — thanks!
haha…it did for me too! Loved watching the kids enjoy the sprinklers. Let me know how you like the recipe!
We spend every Memorial Day weekend at my parents shore home. It’s the start to summer.
So nice! Have a great time!
Your Memorial Day menu sounds amazing!! We have a soy-based flank steak recipe that is one of our absolute favorites. Enjoy!!
Thanks so much! I wonder if it’s the same recipe!!
Polenta cakes! Ah! You just reminded me I had a craving for some great polenta! I need to pick some up!
This was my first time making the Trader Joe’s polenta cakes. They were so good!
Yum! SO many great recipes here! And I’m hoping to see the Memorial Day spread – Is it here already?!!
Thanks so much Anne! I can’t believe we’re already at the end of May – time flies when you’re blogging 😉
