Menu Plan Monday: Week of March 30, 2015
Getting ready for Passover, recipes and links I loved from last week, and this week’s Menu Plan Monday!
Hope everyone had a great weekend! Although it still doesn’t feel like spring (Saturday was 36 degrees!), we did some spring cleaning around here to get ready for Passover, which starts this Friday night. As the week progresses I’ll finish clearing the pantry of the cereals, grains, and snack foods we can’t eat next week and I’ll fill our shelves with the Kosher for Passover staples we’ll need for the 8-day holiday.
I’ll be making some recipes this week that will use up some of those pantry goods (e.g. canned beans) and that we can’t eat over Passover (e.g. pasta). Check out my menu below to see what’s planned. But before you do, check out these posts and recipes I enjoyed last week. I hope you do too!

Monday: Sweet Corn & Spinach Baked Flautas with Spinach Salad with Jicama
Tuesday: Spicy Sun-Dried Tomato and Broccoli Pasta with Side Salad
Wednesday: Off Duty
Thursday: Whatever remains in fridge that needs to get used up before Passover!
Friday: Passover 1st Seder at my in-laws – bringing quinoa with fennel and dried fruit and a matzo farfel stuffing

Hi Jessica, Love your link love! Your menu plan looks nice. My son is home, and because he loves to grill, I am taking advantage of that. Lots of grilled chicken, repurposed into cob salad or as a Caesar salad topping. Made a big pot of black beans and will do something with them. Have a terrific week!!!!
