Menu Plan Monday: Week of June 1, 2015
Why I’m cooking this NY Times fish recipe this week, plus the rest of my weekly menu and links I love!
This week is starting out rainy and cold – a far cry from the 80+ weather we had Saturday! Thankfully I don’t have anything planned to make on the grill until the end of the week. This week I’ll be doing some recipe testing and making a fish dish my husband has been asking me to make for weeks, ever since he read the NY Times’ article Conquering the Fear of Cooking Fish.
Neither of us is afraid of cooking fish, but fish is definitely not my husband’s preferred protein. Thankfully I’ve changed his mind some on salmon – first with my cold poached version on salads, now with some of my hot recipes like this one (it had chips on it, which helped!). Oh, and he likes my salmon burgers too! I’ve had a few other fish successes with him, but for the most part he’s not so excited to come home to the smell of fish cooking in the kitchen. So I was taken aback to receive his text message a few weeks ago with a link to the Times article and requests for this fish dish ever since. Of course the fish is basted in butter, so I shouldn’t have been too surprised!
So honey, if you’re reading this – get ready for dinner tomorrow night. It’s fish night!

I actually just cooked fish last night – tilapia – and I was so amazed with how well it turned out!! I just baked it for 5 minutes, put on the topping and brushed it with some almond milk, then baked it for 5-6 more minutes!!
That’s awesome! What was the topping? I’m using tilapia tonight as well!
I love cooking/eating fish! I want to try poaching some in my rice cooker soon! That will be an adventure though!
