August food holidays, my upcoming SMT, and a not-to-be-missed #LinkLove!
Happy August everyone! A few fun things to note about the unofficial last month of summer (cue sad music, tears, and nose blowing): National holidays in August include Kids Eat Right Month, Panini Month and Sandwich Month (take a look at the recipe link below for an awesome sandwich roundup), Peach Month (there are two peach recipe roundups below), and Eat Dessert First Month. I didn’t even realize that August was National Sandwich Month, but how approrpiate then that I am heading to Chicago tonight for a back to school satellite media tour (SMT) tomorrow morning with a focus on healthy lunch sandwiches (sponsored by Land O’Frost)! Keep an eye on my Instagram, Facebook, and Twitter profiles for behind-the-scenes photos and updates on when the segments and interviews will be available to view!
As a result of my absence tonight and tomorrow, this week’s meal plan is a little lacking this week. I’m leaving some easy meals for my babysitter to put together for the kids, and my husband will likely be having take out. I’ll be updating the menu later this week with what’s in store for the rest of the week.

Monday: Mommy’s on business trip – kids will have tilapia, roasted sweet potatoes, and leftover cauliflower tabbouleh
Tuesday: Mommy’s on business trip day 2 – kids will have Tuscan white bean soup, leftover from freezer
Wednesday: Eggs of some kind
Thursday: Sriracha Black Bean Burgers with Fried Egg and Sesame Ginger Miso Cucumber Salad
Friday: Grilled steak, Grilled Peach and Green Bean Salad, and Grilled Potatoes with Rosemary & Smoked Paprika
