Hey there! How was your weekend? Hope you had a good one! We had a very productive weekend: We made Hamantaschen for the upcoming holiday of Purim, bought some new organizational stuff for our kitchen pantry (have you heard about the Get Your Kitchen Organized Challenge my friends Katie and Sally are hosting?), stocked up on our groceries for the week ahead (was so excited to see Florida strawberries in the market!), and enjoyed some time with family and friends while we were at it!

Tuesday:
Lunch: Veggie & Bean Quinoa Bites with sliced veggies and strawberries
Dinner: Farinata with Tomatoes, Mozzarella, andPesto Drizzle and Roasted Portobello Mushrooms and Cauliflower
Wednesday:
Lunch: Salmon & Vegetable Croquettes (from Trader Joe’s) with Chickpea & Red Pepper Veggie Fries and grapes
Dinner: Sun-Dried Tomato, Spinach, and Goat Cheese Baked Oatmeal Frittata with Citrus Fennel Salad
Thursday:
Lunch: Leftover baked oatmeal
Dinner: Tofu ravioli with Tomato Sauce with Mushrooms
Friday: Steak with Citrus Salsa and Roasted Carrots and Broccoli
