Menu Plan Monday: Week of December 1, 2014
Thanksgiving has passed, and now it’s time to get back to routine – at least until the next round of holiday festivities!
If you’re trying to keep things healthy this year, check out the Elf for Health Challenges started by my blogger friend (and fellow RDN) Lindsay at The Lean Green Bean. Today starts the second week, which includes challenges like eating the rainbow and going makeup free. What a great way to stay on track, have some fun, and make new friends this holiday season.
This week I’m excited to host a group of women from the Westchester Hadassah group in my home to show them how to keep their holiday party food and meals on the lighter side. I will be demoing an appetizer, entree, and main course, which will include mushroom tartlets, pistachio-crusted salmon with my orange-ginger cranberry sauce, and a mixed berry crisp. Other than that, this week’s meals include my Meatless Monday black bean burgers, a Nutritioulicious-looking quinoa salad from Megan over at The Housewife in Training Files, and a warm and comforting stew.

Tuesday: Maple Glazed Fish and Caramelized Butternut Squash Quinoa Salad with Goat Cheese and Roasted Grapes
Wednesday: Healthy Holiday Cooking Demo
Thursday: Off Duty
Friday: Moroccan Lamb Stew
