Passover-Friendly Recipes

As promised, here are some of my recipes that can be made all year round, but are also acceptable on Passover. Some have minor modifications that take into account those foods you cannot eat on Passover.
- Roasted Chicken with Fennel, Carrots, and Dried Plums
- Roasted Chicken with Artichokes, Peppers, and Sun-Dried Tomatoes
- Chicken Mexicano with Nectarine Salsa – use matzo meal in place of corn chips
- Moroccan-Spiced Lamb Burgers
- Bunless Salmon Burgers – use matzo meal in place of panko
- Quinoa-Stuffed Cornish Hens (yes, quinoa is a Passover-friendly food)
- Cod with Cider Shallot Sauce
- Poached Salmon with Asian Pear, Oranges, and Cilantro-Shallot Vinaigrette
- Salmon Peach Quinoa Salad
- Shakshuka
- Ratatouille
- Cilantro-Lime Steak
- Hearty Beef & Vegetable Stew – omit za’atar and white beans
- Parsnip Pear Soup
- Mexican Frittata – omit black beans and serve with matzo instead of tortillas
- Spinach-Pepper Frittata – omit grainy mustard or use kosher for Passover mustard
- Greek Frittata
- Spaghetti Squash Chicken Puttanesca
- Shorty’s Brown Rice – make with quinoa instead of rice
- Cauliflower Burnt Rice
- Rosemary-Roasted Cauliflower with Raisins
- Chili-Lime Roasted Butternut Squash
