Roasted Red Bell Peppers and Artichoke “Tapenade” {Recipe}

In addition to it being American Heart month, this Sunday is the Super Bowl. If you’re like most people, Super Bowl Sunday isn’t the most balanced day of eating, nor is it very heart-healthy. But this year you can make it different by cooking up some heart-healthy recipes that are as delicious as they are nutritious for you.

Here’s a great heart-healthy appetizer and hors d’oeuvre from Go Red For Women

Ingredients

  • 12 ounces roasted red bell peppers rinsed and drained if bottled
  • 1/2 14- ounce can quartered artichoke hearts rinsed and drained
  • 2 ounces sliced button mushrooms
  • 3 tablespoons chopped fresh basil or 1 tablespoon dried basil crumbled
  • 2 to 3 tablespoons fresh lemon juice or cider vinegar
  • 2 tablespoons chopped red onion
  • 2 medium garlic cloves halved
  • 2 tablespoons olive oil extra virgin preferred
  • 1/4 teaspoon salt

Instructions

  1. In a food processor or blender, pulse the bell peppers, artichokes, mushrooms, basil, lemon juice, onion, and garlic until coarse.
  2. Pour the mixture into a medium bowl.
  3. Stir in the oil and salt.

Recipe Notes

Nutrition facts are only for the tapenade; they do not include crackers or melba toast.
Cook’s Tip: Serve the tapenade on unsalted melba toast rounds, which have little to no sodium. When buying crackers, bagel chips, or pita chips, choose the whole-grain types and check the nutrition labels to make sure you’re buying the lowest sodium available.

Nutriton Note: Red Bell Peppers are a low-calorie source of vitamin C, with 80 mg per 1/2 cup. Red bell peppers contain about 1 g of soluble fiber per 1/2 cup and about 3 g in one whole pepper. Artichokes are also a low-calorie vegetable high in insoluble fiber
