Although relatively new to most Americans, quinoa has been a staple of the of Inca diet in Bolivia, Peru, and Chile for over 5,000 years. In fact, quinoa means “the mother grain” in the Inca language. While some people may still not know how to pronounce this grain, quinoa (pronounced Keen-wa, by the way) has quickly become a pantry staple in our house.
Despite its use as a grain, quinoa is actually a seed and referred to as a pseudo grain – similar to buckwheat and teff, other ancient grains that have recently become popular. You also may be surprised to learn that quinoa comes from the same family as Swiss chard, spinach, and beets, and since it’s actually a seed, it’s gluten free.
Compared to other gluten-free grains, quinoa contains more antioxidants, fiber, iron, and most notably protein. In fact, quinoa is one of the only plant foods that’s a complete protein – meaning it contains all of the essential amino acids your body needs. Recent research has shown health benefits of quinoa including its potential in managing type 2 diabetes and its positive effect on appetite control and blood lipid profile, including triglycerides and cholesterol.
Quinoa is often used in dishes in place of rice and other grains, but it is increasingly being used as a gluten-free flour substitute and for a variety of other culinary uses. Personally, my favorite thing about quinoa is how quickly it cooks up – 15 minutes is all it takes!

This is great Jessica! I made quinoa breakfast bars (from a Lean Green Bean recipe) and quinoa/cheese bites last weekend–I loved them both, but my kids STILL don’t like the taste of quinoa. Sigh.
