Roasted Fennel, Garlic Scape, and Sweet Onion Dip

What do you do when you have a handful of uneaten CSA vegetables and another delivery coming the next day? Roast them up and make them into a dip! At least that’s what I did the other night. I had one fennel bulb, a handful of garlic scapes, and three small sweet red onions. I also had half a dozen…

Fish Tacos

A couple of weeks ago was Cinco de Mayo, a day when people were out having tequila shots, chips and salsa, and all sorts of Mexican food. Unfortuantely I didn’t get to celebrate that day, but reading blog posts about the day definitely put me in the mood for some Mexican food of my own. So the next night I whipped up some fish tacos for a fun, interactive dinner. The next time you’re in the mood for Mexican, make some at home and try this recipe! … read more »

Tzatziki Sauce

In celebration of National Mediterranean Diet Month, here is the second of two Mediterranean-inspired recipes from Nutritioulicious intern Jo Bartell.
Since I shared a nutritioulicous baked falafel recipe yesterday, I thought it would be fitting to share my easy recipe for tzatziki sauce today. Tzatziki is a Greek dipping sauce that tastes great on its own or with falafel, sliced veggies, or whole-wheat pita. Tzatziki demonstrates yet another use for nutritious, delicious, and protein-packed Greek yogurt. I used 2% plain Greek yogurt for this recipe, but it also tastes great with 0% if you want to cut out even more of the fat. … read more »

Baked Falafel

In celebration of National Mediterranean Diet Month, here is the first of two Mediterranean-inspired recipes from Nutritioulicious intern Jo Bartell. I have always loved falafel. Lucky for me there is no shortage of delicious, crispy falafel at the various Middle Eastern restaurants and falafel stands scattered throughout New York City. For those of you who are not familiar with this…

Matzo Pizza

One of my favorite meals to make on Passover is matzo pizza. I’ve always been a fan of thin crust pizza, so I don’t find matzo pizza to be that different. I’ve also been told I make a mean matzo pizza — in fact, at my bridal shower when my husband was asked which recipe of mine is his favorite he…

Roasted Garlicky Green Beans

Roasted Garlicky Green Beans are a crisp and delicious side dish – you’ll never look at green beans the same way again! | Pin the Recipe Before I had kids I was at an Italian restaurant for dinner and ordered “Burnt Green Beans.” I didn’t really know what it was when I ordered it, but the waiter said that they were just…

Soy Ginger Chicken Negimaki

When my husband was growing up, negimaki was a weekly dinner in his house. On the other hand, if you asked my mom (who cooked all the meals in my house) to make negimaki her likely response would be “nega what?!”  — and I never would have asked because I for one didn’t know what it was either! But as…

National Grilled Cheese Month!

Did you know April is National Grilled Cheese Month? I love cheese, especially the ooey, gooey deliciousness of melted cheese between two slices of bread, so I am more than happy to celebrate this national “holiday” with some memories of grilled cheese from when I was a kid and a classic recipe with a healthy twist. When I was younger,…

Pad Thai Experiment

The other day I decided I was going to make peanut noodles with tofu for dinner, but my husband asked if we could have Pad Thai instead. We generally order in Pad Thai, so I was a little skeptical about how I was going to match the flavors of the traditional dish, but decided I would give it a try…

Tempeh with Zucchini, Peas, and Tomatoes

By Megan Kian Yesterday I told you about tempeh, one of my new favorite soy products. Today, I thought I would share a recipe showing just one of the ways tempeh can be used to create a quick and easy dish. I used a recipe from Vegetarian Times, which is a great source for vegetarian recipes. I like this recipe…

Best Roast Chicken Breasts

For dinner Friday night I made roasted chicken breasts on the bone, a traditional chicken dish for the Sabbath that both my husband and I love. This time I made it a little different than usual, and we were both amazed by how moist and juicy it came out. Unfortunately I didn’t take any pictures, but I needed to share…
