Switch up your regular chicken salad with this version made with apricots and pineapple, lightened up with Greek yogurt.

Ingredients

  • 2 boneless skinless chicken breasts, cooked and finely chopped
  • 1/3 cup finely chopped dried apricots
  • 1/3 cup finely chopped fresh pineapple
  • 1 stalk celery, finely diced
  • 2 stalks green onions, chopped
  • 1/4 cup chopped almonds
  • 1/2 cup nonfat plain Greek yogurt
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, stir together all ingredients. Chill until cold.
  2. Store in an airtight container in the refrigerator until ready to serve.
