In a medium mixing bowl, mash tuna with 2 tablespoons hummus and lemon juice. Fold in carrots and red onion.
If desired, toast bread and spread each slice with one teaspoon hummus. Divide tuna salad between two slices of bread and top with sliced cucumber. Cover each sandwich with the remaining two slices of bread.
