Tomato Jam

Sweet and savory, this tomato jam is a great topping for burgers, eggs, or even a toasted piece of sourdough bread. Be warned - once you start, you may not be able to stop!

Ingredients

  • 4 cups whole cherry tomatoes coarsely chopped
  • 1 cup sugar
  • 2 tablespoons freshly squeezed lime juice
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cumin
  • 1/4 - 1/2 teaspoon ground cinnamon
  • 1 teaspoon salt
  • 1 jalapeno pepper seeded and minced (add some seeds if you want to spice it up!)

Instructions

  1. Combine all ingredients in a medium saucepan. Bring to a boil over medium heat, stirring often.
  2. Reduce heat and simmer, uncovered, stirring occasionally until mixture has thickened, about 1 1/2 hours. Taste and adjust seasoning.
  3. Cool and refrigerate until ready to use. The jam will last about 1 to 2 weeks.
