A delightfully refreshing, no-sugar-added Mojito gets a summery twist with the addition of fresh watermelon!

Ingredients
1/2cup4 oz watermelon puree
20mint leaves
Sugar(optional)
Crushed ice
2tablespoons1 oz fresh squeezed lime juice
1/2cup4 oz white rum
Club soda
Instructions
To make the watermelon puree, blend seedless watermelon cubes (about 1 cup) in a blender or
food processor. Strain into glass and set aside.
Rub the rims of 2 highball glasses with a mint leaf and dip in sugar to coat (optional). Fill glasses
halfway with crushed ice.
Tear mint leaves and split between the two glasses. To each glass add 2 ounces watermelon puree, 2 ounces rum, and 1 tablespoon lime juice. Top with club soda and stir to combine. Garnish with extra mint leaves.
Recipe Notes
If you prefer a sweeter drink, muddle mint leaves with 1 tablespoon sugar before adding to glasses.
