Hope you had a great weekend! We were away skiing this past weekend and I came home to a leak in my basement and lots of laundry to do (keeping it real here guys!), so I’m just stopping in quickly today to share this week’s Link Love and Menu Plan Monday.

Monday: 

Lunch: Veggie burger, sliced veggies, grapes

Dinner: Hearty Vegetable Lentil Chili with grilled cheese croutons

Tuesday: 

Lunch: Leftover lentil chili and clementine

Dinner: Pasta with veggie & beef bolognese

Wednesday: 

Lunch: Soynut butter sandwiches with apples and sliced veggies

Dinner: Baked salmon, Grilled Grape Farro Salad, and roasted broccoli

Thursday: 

Lunch: Mozzarella veggie skewers and fruit

Dinner: Leftovers

Friday: Soy-Marinated Steak with Roasted Garlic Turmeric Parsnip and Carrot Fries and Mushroom Onion Barley

  1. Did I miss out the Menu Plan Monday?! I hope not.. Next week, I’ll start using this Menu Plan. I’ve been a greasy eater, and I promised that I will start my year consuming a good, nourishing food. I will say goodbye to pizza, and greasy burgers! Also, your Asian-Style Farro Buddha Bowl with Crispy Baked Tofu, looks yum-yum, I will prepare that over the weekend! Btw, do you have any Tofu recipe that you can suggest? Thanks so much!

      You can find the most recent menu plan monday post here! So glad to hear you’re looking to improve your diet and I hope my recipes help you do so! The tofu in the farro bowl is my go-to tofu recipe!

  2. I love your menu plan. I’ve always been busy trying out a different recipe that I don’t actually write them down in advance. Thanks for sharing this post with us. I really appreciate it. I’ll try everything real soon and hopefully, my loved ones will like it. By the way, how do you plan a month menu?

    1. Thanks so much Julia! I’m glad it’s helpful. Keep me posted how everyone likes it. I don’t normally plan my month in advance, but sometimes I do two weeks at a time and base what’s on the menu on what I know will be leftover from the week before, what ingredients are on sale at the supermarket, and what recipes I may want to try. If you use a tool like Gatheredtable, which I mention and link to in the post, you can more easily plan the whole month in advance. Good luck!
